The unmistakable scent, the bright green color, the link with the territory: all this makes immensely unique the Tuscan Extra Virgin Olive Oil IGP, a certified quality product and characterized by a pungent, bitter, fruity and vegetable flavor. The “green gold” is made in many areas of Tuscany and tells all the good and beautiful of these geographical areas.
In Tuscany every corner speaks of oil, whose production is strongly linked to the unmistakable landscape and its culture. Whether it is the surroundings of Florence or the hills of Chianti, Siena and its beautiful countryside with evocative colors, Grosseto or the wonderful Maremma, each area has its own peculiarity. The mild climate, the low rainfall, the hilly terrain and strong limestone make here the olive tree is rather widespread, with about 93 thousand hectares of olive trees, located 90% in hilly areas or low mountain between Florence, Grosseto, Siena and Arezzo. There are an estimated of about 430 active mills that produce over 250 thousand quintals of oil by making 2.91% of the total national production.
The olive species cultivated in Tuscany are those known as the Frantoio, medium-sized, vigorous and with broad foliage and medium dense; the Moraiolo, rustic and little imposing, with a slightly voluminous and thick foliage; the Leccino, of medium size, with expanded and thick foliage and the Pendolino, moderately vigorous, with long branches.
The production of Tuscan extra virgin olive oil boasts some excellent oils, with protected designation of origin, such as Chianti Classic DOP extra virgin olive oil, Lucca DOP extra virgin olive oil, Seggiano DOP extra virgin olive oil, Terre di Siena DOP extra virgin olive oil and Tuscan PGI extra virgin olive oil.
If there is a place where olive growing has managed to deeply mark the landscape, history and culture of the people who live there, it is certainly Tuscany. There is no area of the region, from the coastal strip to the hilly areas, where the olive tree does not show itself and where olive growers, over time, influenced by the characteristics of the territory, the environment and the olives that grew there, have not been able to give life to an oil of great quality from the origins always recognizable but from the peculiarities different according to the production areas. The Tuscan oil, as well as the landscapes of the region, is therefore always unmistakable but never equal to itself, the result of a varied environmental context, the micro-environmental differences that distinguish it and the rich biodiversity that characterizes the olive production that counts as many as 80 different varieties of native olive trees classified. It is no coincidence that Tuscan olive oil production has been protected since 1998 by the Tuscan PGI, which, thanks to the provisions contained in the Production Specification, ensures that every stage of the production process, from the cultivation of olives to the pressing and packaging, must take place within the Tuscan territory, using all the indigenous varieties of olives, including frantoio, leccino, moraiolo, maurino, leccio del corno, pendolino and correggiolo.
